A Different Type of Sandwich You Can Serve in Less Than 20 Minutes
I am always in search of interesting, easy and quick sandwiches to make for myself and others. I get bored eating the same old thing, day-after-day, week-in and week-out. I imagine there are many of you that feel the same way.
This sandwich is definitely not your typical, boring, garden-variety sandwich. You’ll notice it isn’t being served on your typical slice of bread. Instead, it is gently enfolded by warm flatbread. Flatbread is soft, slightly chewy and delicious, especially when warmed.
Flatbread starts with a dough generally made without yeast (known as ‘unleavened’ bread because it doesn’t go through the rising and kneading process), that is rolled out flat, and then cooked in a brick oven. You can usually find it in your local market, often in the deli area. It might be in the area where they display international foods, as well.
Shrimp make an excellent and filling sandwich. Here, they are combined simply with cucumber, feta cheese and avocado. It is the avocado that is the “secret ingredient” that binds this filling together without the use of any mayo Avocado is far healthier than mayo, containing the kind of fat that is beneficial to heart disease. Plus it is just plain tasty!

Quick Tip: To easily warm the flatbread, just pop it in your toaster for the same amount of time you would generally toast bread to your preferred level of toasty goodness.
