Strange Name, Scrumptious Cookie Bars
It’s true! This amazingly easy recipe that Jamielyn posted for Congo Bars is probably the easiest cookie bar on the planet. There are only 8 ingredients, and 2 of those are seasonings. Most bar cookie have at least a dozen ingredients. Nor are there a ton of steps to execute. You don’t even have to pre-bake a crust. The only way these could be easier is if I baked them for you!
Because of the way they are made, all in one batter and baked in one layer, the end up being crispy around the edges, yet are still moist and chewy in the middle. In a way, they remind me of cake. I could see eating one still warm from the oven, topped with a scoop of vanilla bean ice cream – YUM!
This is actually the kind of baking that I can do – the very simple kind. I am not very good at measuring, and the science of baking demands exacting measurements to achieve the desired results. I am a much better cook, where I can add a pinch of this or a handful of that and go by how something tastes to determine if I have “done it right.”

Quick Tip: When measuring your flour, it is critical to the recipe that you measure it correctly. Having either too much or too little flour can ruin your results. Remember, baking is more of a science, while cooking is more of an art. To properly measure flour, spoon it into your measuring cup. When it is heaped over the top, take the back of a knife and scrape off the excess. You will now have the proper amount.
