You’ve Finally Figured It Out – The Potato Is King Of The Veggies!
There is no veggie that makes more comforting “comfort food” than the potato. Hands-down, no question, it is the king of the veggies and would win any competition you would enter your potato dish into, if you were of a mind to compete. So how about that next potluck?
Hmmm…it’s not exactly a competition, or is it? You know that everyone present is trying out the dishes and ranking them in their minds as to which is the very best on the table and which ones are butt-ugly and toxic-tasting.
You also know that you are hoping, and maybe even praying, that everyone has favorable comments about your dish and a lot of friends and, yes, even strangers, will walk up and ask you for the recipe. “Who made that yummy potato dish?” “Why, that one’s mine!” you say with pride in your voice and a blush on your cheek. There, now doesn’t that feel grand?
Want to “win” that next friendly competition at the family potluck, church social or office function? Make this dish! It feeds a crowd and it so rich even the Rockefellers will be begging for change! It will put all of that other comfort food to shame, for sure!

Quick Tip: Have you ever tried to cut a warm baked potato? They are just too squishy at that temperature to make nice cubes. So you have two choices to get nicely-cubed potatoes: either cut them into cubes before you bake them, or let them cool completely after they are baked before you cube them.
