Cheesy, Saucy, and Gooey, Oh My!

Queso is, honestly, one of the best gifts to grace our planet. Creamy, cheesey, gooey: queso is one of my favorite dips to make for parties or gatherings.

My Abuela’s Crock Pot Queso is, hands down, one of the most requested recipes from my friends and extended family. For the first time, I’m revealing the recipe for everyone to have! Yes, you read that name right – this dip is made in a crock pot. What could be simpler than that?

My favorite part about this recipe is that you can intensify or down play the flavor as much as you want. If you really like spicy queso, add additional chili powder, or substitute half the American cheese with pepper jack cheese – yummy! However, I love the recipe for Abuela’s Crock Pot Queso just the way it is.

Obviously, tortilla chips are the best for dipping, but you could always dip in pita bread slices, carrot sticks, or freshly cut vegetables.

After I make the dip, I always just leave it in the Crock Pot, and transport it to wherever I’m taking it to! I’ve brought this queso dip to PTA meetings, church confirmation parties, baby showers, and more.

Quick Tip: If you don’t like spicy food, simply remove the green chilis from the recipe!
