The Noodle That Quietly Took The World By Storm
I have been making a variation of this dish for quite a few years now. I call it my “bare cupboard cuisine” because I always seem to still have all of the necessary ingredients to make this on-hand, when the rest of the cupboard is totally devoid of food.
Debi has actually captured this elegantly simple recipe for us, and the next time I make it, I am going to follow her directions and see if I like it better than what I have always made myself in desperate times. I think her version will be creamy and smooth and taste even better than my own creation. I am just glad to know that I am not the only person who has tried such an unusual concoction, and lived to tell the tale.
It really is a type of comfort food to me. I guess anything with pasta in it has that effect on me, especially hot dishes, although I have grown nostalgic eating cold macaroni salad before, too. It is the type of dish you don’t really have to put too much thought into preparing, so it is perfect for those times when your eyes are puffed shut from weeping or your hands are unsteady because you have forgotten to eat for three days due to some real or imagined trauma in your life.

Quick Tip: Once you have added the dairy, do not drain the noodles. The sauce will thicken as it stands and the noodles will absorb most of the liquid.
