No Cheese In Sight, But That Doesn’t Make It Health Food!

My, oh my! This has got to be one of the most sumptuous main dish casseroles you will ever taste. But you can also serve it as a snack! Isn’t that an interesting combination of roles for one dish?

Nobody in their right mind would EVER confuse this with “health food,” but every once in a while, don’t we deserve to kick up our heels and throw gastronomic caution to the wind? To indulge our taste for the rich and creamy by using real butter, real cream? Of course we do! “Everything in moderation, including moderation,” as flamboyant author Oscar Wilde once said.

If ever there was a dish to tempt you to break your diet, this would be the one! It is as equally at home being served with toast points, while gracing the tables of dignitaries at posh dinner parties, as it is being served as a dip with pita chips while you cheer on your favorite team during your next Big Game party.

There is a bit of a kick from the cayenne pepper and paprika, but not enough to make it really spicy, just enough to give it an interesting flavor. This particular version calls for onion and bell pepper, but feel free to omit those ingredients, if they don’t suit your taste.

Quick Tip:  If you don’t plan on serving this with bread to soak up the large volume of white sauce this recipe makes, instead of adding the crab into the total volume of sauce, mix all of your other ingredients first, and then start adding sauce until you get the consistency you prefer before you bake it.
