Who would have guessed that the humble pickle would make such a great appetizer? The crunch of the pickle, the silky smoothness of the cream cheese and the salty tang of the dried beef give this easy-to-make appetizer a lot of taste – and texture – appeal. Their round, bullseye shape gives them a unique visual impact, as well. The easy-to-eat size and shape make them the ideal finger food for a party.
You could even add powdered Ranch or Italian dressing to the cream cheese for an extra burst of flavor. Making several batches using different types of pickles will ensure that all of your guests can find a pickle to love.
INGREDIENTS
8 whole dill pickles
2 blocks cream cheese
3 pkgs. dried beef
DIRECTIONS
Remove 8 pickles from the jar and place them on a paper towel to drain.
Slice a block of cream cheese into 8 pieces.
Sandwich a whole pickle between two slices of cream cheese, and then smash and roll the whole thing between your hands to encase the pickle in the cream cheese.
Wrap two slices of dried beef around the cream cheese-encased pickle, using some of the leftover cream cheese from the wrapper to “glue” the seams together where the dried beef overlaps.
Refrigerate until ready to serve to firm up the cream cheese. Slice into medallions before serving.
