Sink Your Spoon into a Bowl of This Delicious Tortellini Soup

I love weeknight dinner meals that I don’t have to cook. Eating out isn’t always an option, though, and getting other people to cook doesn’t always work. So that means I have to get creative. How do I make sure we’re all fed and avoid cooking, without resorting to sandwiches? I like to think this is why the slow cooker was invented – so that lazy chefs like me can get away with the bare minimum. This recipe by New Nostalgia turns into an absolutely amazing tortellini soup – creamy, cheesy, and it’s even got vegetables in it! But the kicker? You just toss the ingredients in the crock pot and never look back. Give it a few stirs if you’re around, or just leave it till it’s dinner time.

This recipe is written as a vegetarian recipe, but it’s so filling that I can’t imagine anyone would even notice. Most of the ingredients are things I have on hand all the time, and if you don’t have vegetable broth, you could always substitute chicken broth or even water – just be sure to add a few Italian herbs and spices for flavor. Quick tip: It’s easy to turn this into a heartier meal by adding some cooked ground meat. I like a mix of beef and pork, but Italian sausage would work great!
