If you have known me for more than a minute, then you know that I have an ongoing and passionate affair with Mexican food. I crave it, I dream about it, and I will go out of my way and drive past dozens of other places to eat just to reach one of my favorite Mexican restaurants.

Being of a practical and frugal nature, however, I soon realized that this torrid affair was going to bankrupt me if I didn’t break it off. Believe me, I gave it the good ol’ college try, yes sirree! But after two weeks, I found that little voice in the back of my head furtively making plans to overpower the rational me, hijack us and drag us, kicking and screaming, if necessary, to the nearest acceptable purveyor of fine Mexican food.

You don’t even need to go in search of a special cookbook anymore, just get on your computer and let Google be your guide! When I came across Dori’s top notch enchilada recipe, I couldn’t walk away!

Quick Tip:   To keep your tortillas pliable, so that they don’t break when you start rolling your enchiladas, keep them in your microwave, sandwiched between two damp paper towels. Right before you get ready to fill and roll the enchiladas, heat the tortillas for 30 seconds.
