This Crowd Pleasing Chicken Burrito Has a Secret – Broccoli!

Although it’s common for parents to complain about how their kids won’t eat vegetables, have you ever considered how many vegetables you eat yourself? I took a look at my diet a few days ago and realized that truthfully, I’m worse than the kids are! My own vegetable intake is dismal and I need to get that sorted out. So I started looking for recipes where I could get vegetables in every bite, and this interesting burrito came up on my Pinterest feed. Granted, at first glance it sounds a little odd. Broccoli in a burrito? With chicken and cheese? But trust me, the combination is delicious. No, this won’t taste like an actual burrito of any kind. But it does turn a classic chicken and vegetable casserole into something fun and easy to eat. It’s appealing to kids, and it works for adults as well. That’s a compromise I can get behind in this kitchen. I tried this with a variety of toppings, like salsa and pico de gallo, but I think my favorite so far is to do a quick dip into some sour cream. It adds just the right tang to this otherwise cheesy, delicious meal.
