Serve Up This Classic Dinner When You Just Need Some Comfort Food

After I had my first baby I lost all my motivation for cooking. I used to be in the kitchen every night trying a new recipe and so eager for my husband to get home and try it. It was my way to relax and unwind after a long day. But somehow after the birth of our little one that culinary passion was just lost.

More nights than I care to admit my husband and I dined on frozen pizza or take out. Our fridge—once stocked to the point of almost being too full—now as nearly empty save a few condiments and some odds and ends my husband would pick up on his rare visits to the grocery store. If it wasn’t for my sweet as pie mother-in-law I’m not sure we’d have eaten a real meal at all those first few months.

Every Sunday she’d come over to visit us and the baby, and more often than not when she was there she’d cook supper, too. Pretty much everything she makes is delicious, but there was one supper in particular that I instantly fell in love with.

So much so I actually asked for the recipe. I was going to get back in the kitchen.
