Recipe creator Jen says, “Some people escape in dreams of sandy beaches and sunny skies, I escape in dreams of mangoes, chipotle peppers and bacon.” What a great introduction for this recipe!

Summertime can be quite difficult to endure. Kids are out of school and underfoot. The heat can be exhausting and makes everyone grumpy. Your brain is fried and unable to come up with creative ideas for dinner. It is too hot to cook.

Super Salad to the rescue! Just like a superhero in the pages of a graphic novel (that’s a comic book, y’all), this great-tasting, visually-stunning salad will swoop in and save you from your summer doldrums when it comes to putting a quick, easy dinner on your table.

This is not just your average bowl of lettuce! It is a south-of-the-border-inspired creation that uses spices rubbed into chicken in order to raise your body temperature enough to make the air around you seem cooler, by comparison. Then it pairs that chicken with crisp lettuce and cooling veggies.

But it is the dressing that is liable to steal the show. It is a creamy concoction of sweet mango, tangy vinegar and lime, a kiss of honey and a little spicy kick from a bit of jalapeno and spices.

Quick Tip:  After you have applied the rub to the chicken, let it sit for a while and marinate in the spices. It would still taste good if you cooked it immediately, but allowing some marinating time, from 30 minutes up to 8 hours, will infuse the chicken with greater flavor.
