Enjoy Your Favorite Enchiladas Without the Mess

There isn’t much that can bring a whole family together like a Mexican food night! This is a favorite in my house, and we don’t go a week without at least having a few tacos. When I’m really feeling fancy though, I like to go all out with a night of enchiladas, refried beans, rice, and chips and salsa. But who likes the mess of frying tortillas and assembling enchiladas?

Enter this recipe from The Magical Slow Cooker, which has been a lifesaver for me. Instead of making up enchiladas by hand at supper time, you just toss all the ingredients into a crock pot and let them cook on their own. By the time you’re ready for dinner, you have a tasty Mexican feast just about ready. It only takes a few minutes of finishing to make this recipe perfect. Then serve it up and watch them disappear! I would say that it makes great leftovers, but we’ve never had any leftovers when I’ve made this recipe!

Quick Tip: Don’t have a slow cooker, or want this meal to be done faster? Place everything just as instructed into a Dutch oven, and bake at 350 for about an hour to an hour and a half.
