This ingenious chowder that Averie has put together has all the right stuff:  bacon, corn, potatoes and cheese – lots and lots of cheese. As Averie says, “Cheese-based soups are my weakness. The cheesy broth just lures me in.” That, my friends, is exactly why you shouldn’t make this devastatingly delicious chowder, because if you do, there is a serious danger that you are going to become addicted to it. Sure, there are worse addictions, but don’t say I didn’t warn you!

Just looking at the length of the list of ingredients, it might seem like a lot of things, but this is a chowder, a thick soup, and soups require contents and seasonings, far more than your average entrée. Nearly two-thirds of this list are veggies and seasonings. The rest of the ingredients are liquids, thickener and bacon – an over-the-top amount of bacon. Because we all know that everything is better with bacon, right?

Quick Tip:  You can easily make this soup ahead of time and the flavors will only get better over time. You can even freeze it. If you use a higher fat milk, the better it will reheat for you, either from your refrigerator or after thawing, if frozen. Just be sure to reheat it over low heat and stir it so that it doesn’t stick to the bottom of your pan.
