Do You Need A Big Bowl of Comfort? Well Here it Is!
I am always sad to the summer ending. The warm nights and long days disappear into fall all too quickly. My least favorite part about the end of my favorite season is that all the abundance of fresh vegetables in my garden is coming to a close. But with one last hurrah, my garden gives me tons of tomatoes and peppers all at once- what to do with this amazing bounty? Make soup!
This is the perfect recipe to use any last tomatoes or red pepper you may have laying around and it is also a great reason to seek out these fresh veggies at the store (buy a bunch because you are going to want to make a big batch of this soup). The tomatoes are first roasted with the garlic and onions which deepens their flavor. The red peppers are broiled quickly and their charred skins removed- another method of adding multifaceted tastes to this soup. What is especially cool about this soup is that the whole thing is made in the oven rather than cooked on the stove top. No constant stirring involved!
All of the ingredients are added to a blended with the remaining ingredients and then your soup is ready! The best way I have found to describe the taste is a warm summer night in a bowl- comforting, delicious and gone all too soon!
