It used to be that if you wanted Southern comfort food cuisine, you had to visit your Southern relatives, or beg them for their recipes. Then in 1969, a quaint little restaurant opened in Tennessee. It was given the homey name of Cracker Barrel, and the rest is history. A long-time bastion of the South, this chain of restaurants now dots the ribbons of highways nationwide.

Everyone who visits a Cracker Barrel more than once has settled upon their favorites from the menu. There are quite a few that I like and wish that I could make myself. Now Christin has made this possible with her delectable version of one of the most popular dishes. It is a very simple dish of chicken, broccoli and cheese, topped with Ritz crackers. If I had taken the time, I could have probably figured it out, but now I don’t have to – thanks Christin!

So the next time you are craving some good ol’ down-home Southern cooking, or you just need a little dose of comfort food, or maybe there’s no Cracker Barrel restaurant near your house, just pull out this recipe and throw this casserole together. In minutes you will have it assembled and ready for the oven. In about 45 minutes, dinner is served!

Quick Tip:  Don’t like the idea of using cheddar cheese soup? Here’s how to make your own cheesy sauce. Melt 2 Tbsp. of butter in a sauce pan, then add 2 Tbsp. flour, stirring and cooking it for 1-2 minutes to cook out the flour taste. Don’t let it burn! Next, whisk in 1½ cups of milk and let it come to a boil, stirring constantly so that it doesn’t stick to the bottom of your pan. When it has thickened, remove it from the heat and gradually stir in finely-shredded cheddar cheese until it tastes right, to you. Season with salt and pepper, to taste.
