Don’t Let This Recipe Slide Right Past You
During the spring and summer, my thoughts always wander off to islands. Any island will do to get my fantasies swirling in my mind. I love the ocean, the beach, the island breezes and the people, with their laid-back approach to life. But most of all, I just love island food with its bright flavors, colors and uniquely-combined ingredients.
This clever little sandwich is perfect beach party food. Did I say “little?” Why yes, I did – this is a slider! Now there are arguments about the origins of the slider phenomenon. Some say it started in the Pacific Northwest, others say it was New Jersey. Regardless, these miniature sandwiches are oddly satisfying.
Maybe it is because each bite is a “perfect” bite, the type of bite that contains the perfect amount of every ingredient in it, so you can fully experience how the recipe was intended to taste, bite after succulent bite. It doesn’t really matter that you only get a few bites, when each one is packed with flavor and texture.
For those of you that have yet to try pairing fruit with meat, this will be an eye-opening experience. The sweet acidity of the pineapple is just what is needed to cut through the fattiness of the meat. It is a marriage of ingredients made in heaven.

Quick Tip: Look for the freshest, slightly sweet, yeast rolls you can find. The sweetness of the roll pairs nicely with the saltiness of the bacon. If your rolls become a bit stale, slightly moisten a paper towel (damp, not dripping wet), wrap it completely around the rolls and microwave them on high power for 30 seconds. This technique will freshen any stale bread.
