You Can Really Thai One On With This Salad Recipe!

I am always on the lookout for new and interesting salad recipes. I simply cannot stand to eat one more wimpy salad of iceberg lettuce, a bit of tomato and, maybe, a piece or two of cucumber. There’s just no dressing in the world good enough to make that type of salad delicious, satisfying, or even appealing to me. Yuck!

But this salad? Now this one is a real gem! As recipe creator Alyssa says, “You are definitely eating the rainbow with this salad.” Just look at the beautiful colors! You are aware that we eat with our eyes first? If something doesn’t look appetizing to us, we are not too likely to even try it. My eyes are telling me to dive right into this one!

Now take a look at the ingredients. Romaine lettuce, the crunchiest kind. Red cabbage. Crunch! Carrots. More crunch! Edamame. Snap, pop and crunch! Yellow and red bell peppers. Twice the crunch! Onions. Fragrant crunch! Cashews – oh, hold me down! Sweet, glorious crunch. You might as well give up trying to have a conversation with any eating companions while you are noshing on this salad. You wouldn’t be able to hear them talking over all the crunching in your own head while you chew!

Quick Tip:  You can find frozen, shelled edamame in the frozen veggie section of your local market. You can find raw edamame in their shells in the produce section, as well, but they aren’t exactly easy to coax out of their shells. Not quite sure what edamame are? They are soybeans! They are all the rage now for adding color, texture and protein to salads, soups and other dishes.
