Healthy Casserole That Is Perfect For Busy Weeknights
For every person who says that they don’t like cabbage, there are three others who are quietly craving it, behind closed doors. It isn’t easy to “come out of the cabbage closet,” admitting that you have more than a fleeting fondness for what many consider to be a stinky and rather worthless veggie. But in today’s health-conscious society, cabbage can safely step forward and take its rightful place among the superfoods.
Cabbage is packed to the brim with all kinds of important nutrients. Not only does it have a laundry list of vitamins that we all needs, it also supplies important minerals, such as calcium, magnesium and phosphorous and vital nutrients such as folate. But above all of that, it just plain tastes good. It has a mildly sweet flavor, when cooked. It makes an excellent base for salads when shredded. It is one of the easier veggies to work with, because it doesn’t require any pampering or special handling – just cut it up and eat it, cooked or raw.
This great cabbage casserole from Vanessa may just be the “World’s Best” I’m not quite certain how such things could be judged, but I know that it is packed with culinary interest. Then there’s cheese – who doesn’t like cheese?

Quick Tip: Want to add even more interest to this dish? Use red cabbage instead of the typical green. The vibrant reddish-purple color will add visual appeal to the casserole.
