That evening my neighbor served up one of the most creative—and delicious—desserts I’ve ever had: grilled blueberry cobbler! Is your mind blown, too? It turns out that with an aluminun baking pan and just four simple ingredients you can have a cobbler as tasty as if it wasn’t 50 degrees too hot to turn on the oven.
All it takes is mixing up the ingredients of your filling (blueberries, sugar and a little flour), pouring it into your pan and then topping it with the secret ingredient—a can of refrigerated biscuits. It’s so easy—perfect for a hot summer day when you feel like putting in zero effort but still want a great tasting treat!
Ingredients
4 cups fresh blueberries (or frozen thawed and patted dry)
¼ cup granulated sugar
2 tbps all purpose flour
1 can refrigerated buttermilk biscuits
Instructions
Heat up your grill over its medium setting or prepare charcoals for grilling.
Wash the blueberries and transfer to a large mixing bowl. Add the sugar and flour and stir well to combine. Transfer the mixture to an 8″-square disposable baking pan.
Place the pan onto the grill on direct heat and close the lid of the grill. Cook for 10 minutes, then stir briefly. Cook for an additional 5-10 minutes, until the blueberries have largely released their juices and the mixture has swelled up.
Top the blueberry mixture with the biscuits in one layer. Close the lid of the grill and cook for 5-10 minutes, until golden brown.
Remove the pan from the grill (carefully! it will be extremely hot). Let cool slightly before serving.
