Buckle Up For This Tasty Breakfast Treat!
Picture this: It’s a lazy Saturday morning, and everyone is sleeping in. You wake up and go to your kitchen to make some coffee. You would like to treat your family to a special breakfast, but you don’t really feel like standing over the stove cooking bacon and eggs or flipping pancakes. Your waffle iron is packed away somewhere, and you haven’t seen it since you moved into this house. What could you make that is easy, filling and would make everyone happy? This recipe!
This, my friend, is the famous Blueberry Buckle! It has been pleasing families for untold generations. If the recipe has made its way into your family’s collection, it is treasured and handed down from generation-to-generation as an heirloom. It is just that good, and just that cherished.
But it couldn’t be easier to make! There is a very simple batter to prepare, and you probably already have all of the necessary ingredients on-hand. There are only two hard parts about making this recipe: folding in the blueberries gently enough so that they don’t discolor the cake batter, and then waiting for it to finish cooking while its enticing aroma fills your kitchen. But you can do it!

Quick Tip: You can make this ahead of time and then bake it the following morning. Go ahead and prepare the batter, as directed in the recipe. Spread it out in the prepared baking dish, but DO NOT PUT THE SUGAR ON TOP! Cover it with plastic wrap and keep it in your fridge overnight. When you are ready to bake it in the morning, take it out of the fridge and let it come to room temperature (takes about 30 minutes). Sprinkle the top with sugar and bake as directed. If you haven’t let it come to room temperature, it will take longer to bake. Test it with a toothpick in the center for doneness, starting at the 35-minute mark.
