Don’t Miss Out On This Simple Comfort Food That Is Fit For A King!
This recipe used to be a staple in my family. It was often selected to celebrate birthdays and other momentous occasions in our family life. If I look at the image, and then close my eyes, I can almost conjure up the memory of its exact taste. Almost, but not quite. The memory of that taste, along with the recipe for this humble dish, was lost somewhere long ago. Imagine my delighted surprise when I stumbled across this comfort-food memory recipe that Meggan had posted.
As I read through her ingredients list, the memories started coming in. Maybe the thing that threw me off course was the image. You see, in my family we were not “well-to-do,” and thus could not afford canned biscuits to sit under our Chicken a la King like little pillow-y thrones. We had the burnt-toast, white bread special playing that supporting role in our little kingdom. But still, it was a luxurious treat that signaled some type of celebration was afoot.
There isn’t really anything all that remarkable about it. There were chunks of chicken and whatever veggies you had on hand or leftover from earlier dinners that week. It was most often lowly peas and carrots, maybe some potatoes and celery. But it was the sauce that always intrigued me. .

Quick Tip: Want to ensure that your sauce is velvety-smooth with no lumps in it? Use cornstarch instead of flour as a thickener.
