Be still my heart! Spinahc Artichoke Stuffed Chicken is the best thing to come out of my chicken in years—and it’s so easy to make. Simply mix together some cheese, spinach and arichoke hearts, and seasonigs. Then stuff all that deliciousness into some sliced chicken breasts and pop it all in the oven. That’s it! There’s no more work to be done.
Then before you know it’ll you be digging into the most tender and delicious chicken you’ve ever tasted. Each bite is filled with the flavor of the tasty classic dip and you won’t be able to stop yourself from coming back for more.
Ingredients
1 1/2 cups mozzarella cheese, shredded
3/4 cup artichoke hearts, chopped
1 cup spinach, shredded (frozen works well)
1 T fresh rosemary
1 tsp thyme
6 boneless chicken breasts
pinch Kosher salt
pinch pepper
Instructions
Preheat oven to 400°F. Mix the cheese, artichoke, spinach, rosemary, thyme, salt and pepper into a large bowl.
Cut an opening in the chicken breasts lengthwise. Fill the chicken with equal parts of the filling and close off with toothpicks
Put into a dish and cook for 35-40 minutes.

Quick tip: To make the filling extra creamy stir in 4 oz (half a block) of cream cheese.
