Have A Slice (Or Two) Of This Guilt-Free Bread For Breakfast

The other weekend my husband had a business trip and was gone Friday through Monday, which left my daughter and me home alone for the weekend. This doesn’t happen all too often so I made sure to take full advantage of the one on one time together. That meant going to a movie Friday night before coming home to snuggle in bed and read together before sleeping in on Saturday.

When we finally crawled out of bed Saturday morning the first thing out of her mouth was “What’s for breakfast?” Not totally surprised by the question (and actually pretty hungry myself), I wandered into the kitchen looking for inspiration to strike. And… nothing. My mind went totally blank!

A quick search through the pantry revealed plenty of cereal, which was quickly shot down. As my daughter pointed out it was a special weekend and deserved a special breakfast. So we sat down together and started searching on my phone for something to make.

Just as I was about to get things ready for a bacon and egg casserole my daughter (the sweet lover that she is) pointed out some browning bananas in our fruit bowl. I should have known—that girl is a banana bread fiend!

Quick tip: If you don’t have strawberry banana Greek yogurt, plain or vanilla would work just as well.
