Cabbage is one of the healthiest vegetables you can eat. It is full of anti-oxidants, and the red variety also has been shown to help improve heart health and manage cholesterol levels. Red cabbage is an outstanding source of Vitamins C and K, as well.
On top of that cabbage is second only to potatoes in being inexpensive to put on your table. So if you are managing a tight budget, cabbage should be a regular on your grocery list. Cabbage is a very versatile veggie and can be prepared in many delicious ways, most of which are simple and easy to prepare. This coleslaw recipe is an excellent example.
INGREDIENTS
For the Slaw
2 cups green cabbage, finely shredded
2 cups red cabbage, finely shredded
½ cup shredded carrots
¼ cup parsley, chopped
¼ cup pumpkin seeds
¼ cup pine nuts
½ tablespoon sesame seeds
For the Dressing
¼ cup olive oil
½ cup apple cider vinegar
3 tablespoons honey
1 teaspoon Dijon mustard
¼ teaspoon garlic powder
Kosher salt and pepper, to taste
DIRECTIONS
Place cabbage, carrots, and parsley in a large bowl.
Place pumpkin seeds and pine nuts in a dry pan over medium heat and warm until just toasty and aromatic, 1-2 minutes.
Pour toasted pumpkin seeds and pine nuts over top of cabbage.
Whisk together oil, vinegar, honey, mustard, garlic powder, salt and pepper. Pour over top of salad and toss to combine.
Serve directly from bowl or transfer to serving platter. Garnish with sesame seeds. Enjoy!

Quick Tip: Be careful when toasting the pumpkin seeds and pine nuts! Keep the heat setting to the low side of medium and stir or toss frequently. It will only take a few minutes, and they can quickly scorch.
