I could live on mac and cheese and I know for a fact that my kids could too (seeing as my daughter hasn’t eaten anything other than mac and cheese in three days…). However, I also know that this is not the healthiest diet plan for us. And that is why this mac and cheese recipe just saved my dinner times!

While it may look like your ordinary, creamy, delicious mac and cheese, there’s a secret inside that bowl- vegetables! In particular, yellow squash- the perfect color vegetable to sneak into any mac and cheese! You may be wondering if adding squash to the sauce will make the mac and cheese taste gross (I was wondering the same thing) but I can assure you that it just makes it taste better! Even my kids though so and now want “mommy’s special cheese sauce”.

So don’t feel guilty about eating this cheesy dish more frequently than anything else- it is good for you! Vegetables, pasta (try whole wheat pasta for extra nutritional value) and dairy all together in one bowl.
