Bursting With Cherries In Every Bite–This Is Our New Favorite Cake
Every Sunday growing up we’d have a big family dinner at my grandparents’ house. All my aunts and uncles and cousins would come over to take part in the meal and catch up on anything new that happened over the week. (My grandma was especially fond of hearing the neighborhood gossip.)
Their kitchen table would always be loaded down with more dishes than we could ever eat. My grandma would call us all from the kitchen and we’d come crowding into the dining room, feasting our eyes on all the food before us. We’d say grace before all taking our seats and fighting to get the first spoonful of the dishes closest to us.
I remember one year in particular my dad’s youngest brother brought his new girlfriend to family dinner for the first time. She was quiet throughout most of dinner but when it came time to bring out dessert she leapt up and followed my grandma into the kitchen to get the dessert she had made for the occasion.
Before long she followed my grandma (loaded down with a tray of cookies) back into the dining room carrying a towering pink cake to oohs and ahhs around the table.

Quick tip: To make sure your egg whites whip up well whip them in a cold stainless steel bowl (I pop my in the freezer while I’m preparing the rest of the batter).
