They’re The Perfect Treat For A Lazy Weekend Morning
A few months ago my daughter participated in a bake sale at her school to raise money for a field trip to Washington, D.C. I can’t say that I’m an overachiever when it comes to participating in school functions. I do my annual volunteering for the book fair and make donations when asked but that’s usually the extent of it.
However, as soon as I heard the words bake sale I was all over it! I adore baking and take any change I can get to whip up a sweet treat or two. So I immediately started flipping through my favorite cookbook to select a recipe to make.
That recipe? Was not this one. It was a pan of homemade brownies—that turned to a burnt mess when I forgot them in the oven (I can only do so many things at once apparently).
At first I was devastated—my perfect brownies ended up in the trash! But then I picked this muffin recipe as my replacement and all my sadness was swept away in a tide of sugary, blueberry goodness. Between you and me these might just be better than brownies!

Quick tip: To test for doneness insert a toothpick into the center of a muffin—if it comes out with barely any crumbs they’re done.
