One Scoop Of This Tasty Rice Will Never Be Enough
Ever since my husband and I have first started dating we’ve had a weekly date night every Thursday. Even now nine years and three kids later we still stick to that tradition—just now with a little more planning and forethought. Fortunately, we have a standing babysitter who loves our girls and is more than happy to take them for a few hours once a week.
Our dates nights tend to vary. We do everything from movies and plays to hikes and rambling bike rides around our neighborhood. But if we do decide to just grab dinner somewhere there’s only one place we like to go. A local Mexican restaurant whose food never dissappoints—even nearly a decade after we had our first date there.
My husband and I always order the exact same dish every time we go. He orders a steaming plate of steak fajitas and I order enchiladas with an extra helping of spicy Spanish rice. There’s just something about tender and fluffy rice spiced just right that gets me every time. I might have enchilads left over but you can always count on my not leaving a single grain of rice behind.
So to say I was thrilled when I found this recipe would be a major understatement.

Quick tip: Mash tomatoes with a potato masher or pulse for a few seconds in a blender if you don’t like big chunks of tomato.
