When it comes to good old, down-home, Southern comfort food, it is mighty hard to find anything better than chicken pot pie. Tender chunks of chicken and brightly-colored veggies, bathed in silky smooth white sauce, peeking out from under a flaky crust.

Pot pies are quintessential Southern comfort food. What makes them so? First and foremost, you have white sauce. That’s nothing more than fancy talk for gravy, y’all. Every Southerner worth his or her salt has gravy running in their veins. The entire South runs on gravy, and it isn’t considered polite to prepare a meal that doesn’t include at least one form of gravy.
