Creamy Ritz Chicken Casserole sounded like the perfect addition to a Sunday supper spread. I quickly found a recipe that looked both delicious and easy and knew that it would be a perfect contribution. After all, who doesn’t like tender chicken in a creamy sauce topped with crispy, buttery crackers? No one that I know!
After my dad took his first bite of the casserole he declared it his new favorite chicken dish. And by the looks of the empty dish at the end fo the night it seems everyone else felt the same way. I’ll certainly be making this over and over again!
Ingredients
6 cups cooked, chopped chicken breasts
2 cans cream of chicken soup
16 ounces sour cream
2 T. poppy seeds
2 pkgs. buttery crackers (I use Ritz)
1/2 cup butter
Instructions
Mix together the first four ingredients and spoon into a 9×13 baking dish . Crumble the crackers over the top and spoon the melted butter over the crackers. Bake at 350 degrees for 30 minutes.

Quick tip: Make thise extra delicious by adding a cup of shredded cheddar cheese to the chicken, soup and sour cream mixture.
