Original Comfort Food From The Heart of Amish Country

Do you think it would ever be possible to get tired of comfort food? I was thinking about this very topic the other day. I came to the conclusion that it is not the comfort food, itself, that we crave, but rather the feelings that it gives us when we eat it. Feelings of warmth, safety, love and belonging.

These feeling used to be supplied through human interactions with your family, your friends, your social group, faith-based organizations and society at large. As our society has become more technologically-saturated with devices that connect us to vast informational resources, it has also done something else. It has isolated us.

“Whoa now, wait a darned minute missy! What about all the social media involvements we all have, why I have friends all over the world now. I never had that before. If anything, I am MORE connected to people than I ever was before. You are WRONG!” you respond to me with all of the righteous indignation you can muster.

Rant break! While you sit back and consider that, make yourself a big casserole dish of this excellent comfort food that Steph posted for us. It is the quintessential comfort food, coming straight to us from Amish country, where stick-to-your-ribs food has been fueling, and comforting, America for ages. Now, back to the rant….

Quick Tip:  This meal can easily be frozen. Go ahead and make it up, but don’t bake it. Cover it with foil and keep it frozen. When you are ready to bake it, take it out the night before and let it thaw in your fridge overnight. Then bake as directed.
