This Classic Weeknight Dinner Just Got a Fresh New Look

Have you ever wondered how our mothers and grandmothers developed a signature meatloaf? It seems like everyone from the previous generation has a meatloaf recipe that is their go-to. This easy dinner is tasty enough to offer to company and still easy enough for a basic weeknight, which is why I think meatloaf has stayed so popular. This one takes meatloaf to a whole new level by stuffing the loaf with cheese and then wrapping the whole thing in bacon. Can you say yum? I now have my own go-to meatloaf recipe!

This recipe takes about 15 minutes to put together and another hour to bake. That’s not too bad for a standard weeknight meal, and if you make up the meat mixture ahead of time, you can freeze it for future use. Simply thaw the mixture and continue with adding the cheese, bacon, and barbecue sauce. Quick tip: Don’t go cheap on the cheese for this one. Inexpensive cheese typically has a lot of water content which will turn the inside of this recipe into a watery, mushy mess.
