This Is The Only Apple Recipe You Need
Just a few short months ago my husband took a new job that has led to his being out of town for weeks at a time. It’s definitely been an adjustment as I get used to having the house to myself for such a long stretch of time—before this the most time I’ve spent alone in the house was just a couple days—and it’s definitely caused me to lean more on my friends for companionship while he’s away.
One friend in particular has been an absolute lifesaver when I just can’t take the quiet and solitude any more. She’s single so nearly always ready to come over with a bottle one wine in one hand and a pack of Oreos in the other—our favorite lazy night in supplies. I can always count on her to get me out of my funk and realize that everything’s going to be just fine.
However, her most recent visit we decided to ditch the cheap wine and store bought goodies in favor of making our own sweet treats. I had stopped at a local orchard earlier in the week and stocked up on enough apples to last us until next fall and knew they we had to start using them up.
And, fortunately, my friend has the perfect recipe.

Quick tip: For a denser, chewier cake you can bake in a 10in round pan. Precook the apples 2 minutes in the microwave to soften before lying on the batter and reduce the cake baking time to around 25 minutes.
