I love it when this time of year arrives. The light changes, the nights fall more quickly, leaves flutter to the ground and you can feel a chill creeping into the air. You can almost see Autumn flitting amongst the trees, daring you to catch her in the act of painting the trees their glorious colors. Now’s the time to put a big ol’ pot of soup on the stove, bake a loaf of bread and hunker down in the sanctuary of home.

It wraps you in a warm embrace, pulls you close, and pats you on the head with a silent, “There, there child. I’ve got you. You’re safe.” Is it any wonder we get addicted to those foods that give us comfort? It isn’t the food we crave, it’s that feeling!

Quick Tip:  Want to go totally vegetarian? Leave out the chicken and add more mushrooms or other favorite veggies, like spinach, asparagus or peas. Need even more meat? Sprinkle on a generous portion of fried pancetta right before serving.
