Once You Try These You’ll Never Eat Mashed Potatoes Another Way
After the birth of my third child I had a much tougher recovery than with my first two. That adorable girl stole my heart and my energy—meaning I had to be on bed rest. It was a great time for us to bond (she loved to snuggle in my arms) but also meant that I needed some help with the responsibilities I usually took care of around the house.
For the first few weeks my husband was able to take off work, which meant things ran pretty smoothly in our house. But after that we had to call in my sweet mother-in-law for some extra assistance. She was a huge help the last couple weeks I was on bed rest, whipping up meals for us and keeping things tidy—no easy feat with two other small kids in the house.
On her last day with us she went all out cooking us a big Sunday supper. I remember being so emotional and grateful I actually cried while helping her put the finishing touches together for the meal. It had been such a relief to have her help.
Then as we sat down to dinner I tried some of her secret ingredient mashed potatoes and almost cried again. They were that good.

Quick tip: For extra flavor, add some minced garlic.
Mashed potatoes are also GREAT when you use BUTTERMILK OR sour cream! I used buttermilk many years ago before we ever heard of sour cream………and they were a real hit !
Is the caramel ice cream topping Quick Tip really supposed to go with this mashed potato recipe???
Oops – glad you caught that little editing blunder! 🙂 The quick tip has been fixed now, but who knows – maybe the caramel topping would make these mashed potatoes taste even better, haha!
