If you can brown ground beef, make layers in a dish and turn on your oven, you have the necessary skill set to make this tasty dinner. You do your mixing of ingredients in the same skillet you used to brown your beef. Highly recommend draining the excess grease off the meat before adding the other ingredients.
INGREDIENTS
1 lb. ground beef
1½ cups salsa
1 cup corn
¾ cup mayonnaise
1 Tbsp. chili powder
2 cups tortilla chips, crushed
2 cups cheddar cheese, shredded
Cilantro, for garnish, optional
INSTRUCTIONS
Preheat oven to 350 degrees F.
In a large skillet, cook ground beef over medium high heat until cooked. Stir in salsa, corn, mayonnaise and chili powder.
Spread half of meat mixture in a 2 quart casserole dish. Spread half of tortilla chips on top followed by half of the cheese. Repeat layers.
Bake 20 minutes. Top with cilantro, if desired.

Quick Tip: If you don’t happen to have fresh corn available, canned corn (well-drained) will work. Or you could thaw and drain frozen corn. It’s all good!
