Birthdays are a big deal in my family. Everyone gets a party complete with balloons, banners, the meal of their choice, and—of course—whatever cake their heart desires. From when I was little on I remember looking forward to not only my own birthday but simply any birthday because I knew it would be a day filled with tons of food, family and laughter.
Now that I have a family of my own I can’t help but carry on the love of celebrating birthdays. My hubby and our two sons are the lights of my life so I can’t help wanting to spoil them on their special days! I hate to admit it because I have such a sweet tooth myself, but my husband and oldest son aren’t much for sweets—they usually just request shortbread cookies for their birthday treat.
However, my youngest son definitely got his mama’s taste in food. He hasn’t met a sweet treat he doesnt’ like and he uses his birthday as an excuse to try the most indulgent desserts you could imagine. And as someone who loves to bake I embrace his wishes wholeheartedly.
And I have to say that his most recent birthday cake might just be the best one yet…

Quick tip: You can make the red velvet cake layers well in advance—simply wrap tightly in plastic wrap and freeze until the day before you want to assemble the cake. Thaw at toom temperature.
