This salad is light and simple to prepare. Even if you peel the peaches (see Quick Tip) you can have it on the table in about 15 minutes. That includes preparation of the tasty Honey Lemon vinaigrette dressing.
Don’t limit yourself to just peaches in this salad. Any of the summer fruits will create a tasty version. Try plums, strawberries, raspberries or blueberries.
As you change out the fruit, you can also change the greens and the herbs in the vinaigrette dressing. For instance, strawberries and other berries are great with baby spinach and fresh mint in place of the thyme. Fresh plums go well with mixed greens and tarragon in the vinaigrette.
INGREDIENTS
For the vinaigrette
3 Tbsp. freshly squeezed lemon juice
½ tsp lemon zest, finely minced
2 Tbsp. extra virgin olive oil
Salt and pepper, to taste
1 tsp honey
1 tsp chopped fresh thyme or other fresh herbs
For the salad
Romaine lettuce
Cucumber, diced
Fresh peaches, sliced
Smoked bacon, cooked crispy and chopped
DIRECTIONS
Whisk together all of the ingredients for the vinaigrette or shake together well in a covered mason jar.
Pour over the assembled salad ingredients, toss and serve immediately.

Quick Tip: If you want to peel your fresh peaches before you slice them, dip them in boiling water for about 30 seconds. Immediately remove them into an ice water bath for 10 seconds. Now you should be able to pinch up a piece of skin, or use the point of a paring knife, and the skin will slip off easily. It is best to work with perfectly ripe peaches. If they are too hard (unripe) you will have to use a knife to peel them. If they are overly ripe and mushy, you will take off a lot of flesh with the skin
