These Waffles are The Ruler Of Breakfast
Our family gets together once a month after church for Sunday brunch. It’s our time to catch up with everyone since we’re busy with school and sports and life in general. This month, my sister-in-law hosted it and had a beautiful spread. We started with apple cider mimosas before jumping in the kitchen to cook, because what brunch doesn’t start with mimosas?
She brought out the ingredients for the waffles and I tried to guess what she was going to whip up. With 13 people for brunch, including 8 picky little ones, it can be difficult to feed a group that large. She took out the waffle iron and the dish started coming together.
What’s really fun with this breakfast dish, espeically if you have a large group, is creating a topping bar. Think pecan halves, whipped cream, warm maple syrup, cinnamon and honey butter. It’s a fun interactive meal and you can personalize it to make it your own. With our picky kids, this worked out really well because they chose what they wanted.
It’s a perfect fall dish and a great way to incorporate pumpkin into a breakfast favorite with minimum work.

Quick tip: Add some pecans to the batter for a nice nutty crunch.
