Don’t Buy These At The Store. Making Them At Home Is So Much More Fun!
Growing up I don’t think a day went by that my sister and I didn’t sneak off to the basement to rummage around our spare freezer for a frozen treat. One of us would stand watch at the bottom of the stairs while the other searched for whatever latest ice cream novelty our mom had decided to try.
We always had plenty of those red, white and blue rocket pops, and Klondike Bars were fairly common, too (they were my dad’s favorite). But I always looked forward to good, old fashioned ice cream sandwiches more than any other. There was something about the combination of the creamy vanilla ice cream and those stick-to-your fingers cookies that won me over.
So when I saw this recipe to make my own ice cream sandwiches I was immediately drawn to it. It’s definitely a different flavor than the ice cream sandwiches of my youth–but I was more than willing to give it a try (especially when I saw how easy it was). It’s a perfect combination of flavors that satisfies all your summer sweets cravings in one fell swoop. And that’s a winning recipe in my book.
