Could there possibly be anything more comforting than soup? Remember how warm and cozy it made you feel when your mother made tomato soup and grilled cheese sandwiches? Time to grow up and update that particular bastion of comfort food. Sandra’s great recipe will show you one really easy way to do it.
Not only does this soup have tomatoes and cheese (lots of cheese!), but it also has sausage and pasta. Now we are talking some serious, stick-to-your-ribs type comfort food here! This definitely isn’t some watered-down broth suitable for a hoity-toity luncheon or some posh dinner affair. This is more like good friends and family sitting around the dinner table, counting their blessings and dipping crusts of bread into a thick, creamy, filling soup.
No need to serve anything with this, either, as this soup makes a complete meal in a bowl. You most certainly could serve this as a first course at your next party. If you do, your guests are never going to forget it. Be warned, and plan accordingly – this recipe is going to make a lot of soup! So unless you are feeding at least half of an army, or if you don’t want lots of leftovers, you might want to cut this recipe in half.
