Dinner’s Never Been Easier Than With This Delicious Pasta Dish
Right after the birth of my second son I seemed to lose my cooking mojo. I was listless and unmotivated in the kitchen. After long days running after two toddlers and caring for an infant that last thing I wanted to do was spend my time cooking an elaborate meal. And having a pizza loving hubby didn’t help—he was more than happy to encourage me to call our favorite pizza joint. I’m pretty sure I even had them on speed dial.
So you can believe I never turned down the offer from our sweet neighbors to join them for dinner when they invited us. They were an older couple whose grown children lived out of state, and we loved spending time with them. I’d guess that we’d go over there at least every other week—our kids even referred to them as nana and papa.
One night when we went over there for supper we had the most delicious homemade chicken alfredo I’d ever had, and I was sure it had taken them hours to prepare. So you could imagine my shock when I asked for the recipe over my second helping when they told me it was an easy, one pot recipe.

Quick tip: You can use whatever larger pasta you have on hand for this recips—spaghetti works well.
