Put It On The Table And Watch It Disappear
This dish is a perfect crowd pleaser and so simple to clean up. I admit that my least favorite part of cooking is the cleaning. I hate scrubbing dishes and would much rather be sitting with the family talking, watching tv, or even folding another load of laundry.
This dish isn’t quick, so you need to get it on the stove early, but it is delicious and simple. I toss in whatever veggies I have on hand in addition to what the recipe calls for. If I’m feeling adventurous I’ll even make some homemade bread, though that ends up leaving a mess and the beauty of this dish is the simplicity of cleanup. I usually opt for sending the hubby a text asking him to pick up bread from the bakery on the way home or making a pot of rice or potatoes to accompany it.
I have a number of teenage appetites to appease in our household, and there is always a 6 foot tall friend in tow. Serving over rice stretches the meal and fills up the bottomless pits sitting at the table. I haven’t heard a request for dessert once on the nights I make this dinner and there are never leftovers.
