Taco Tuesdays Will Never Be The Same!

Jenn has really captured my attention with this one-pot Mexican feast! I always seem to crave Mexican food. I’m sure that I could eat it for every meal of every day for the rest of my life. There is just something about the spices and the ingredients that combine to make my mouth start chewing to a salsa beat.

I am not talking fast-food Mexican takeout here, although I will cruise the Bell in a pinch. I am talking Mexican seafood, veggies and other dishes that have never come close to being tacos or burritos. There is even a special Mexican flan cake that I want for my next birthday celebration.

Although I might never have thought of turning ordinary pasta into a Mexican-inspired one-pot meal, I think it definitely works. Pasta is one of my most favorite things in life, so finding this recipe really made my day. Now I can enjoy two of my favorite things in one meal!

Best of all, it is easy and quick to prepare, going from raw ingredients to the table in just about 30 minutes. With only one pot to wash, getting in and out of my kitchen at dinner time is going to be a breeze, too!

Quick Tip:  Now that you have the basic recipe, start thinking of things you could add to make it even more delicious, or just to switch it up a little for a change of pace. Why not change the meat? Maybe ground chicken or sausage? You could add veggies, like mushrooms, corn, beans or spinach. Now think of toppings that would add texture or flavor, such as tortillas (either crushed or in strips), chopped tomatoes, salsa, avocados and sour cream popped into my mind, immediately. You could fix this a thousand different ways, all based on the same recipe!
