If You Can Dump Ingredients Into A Pan You Can Make This Delicious Casserole!
I’ll just be honest and admit that my husband and I are not handy—not in the slightest. We’re also not the greatest at following up and getting things fixed. That’s why when our dishwasher broke last year we literally went months without it until finally my dad offered to fix it for us. Honestly, most of the time I just didn’t think about it at all.
That is until I was staring down a pile of dirty dishes the size of Mt. Everest after dinner. Then I thought about it a little.
But instead of trying to get the dishwasher fixed I stubbornly decided that I didn’t need the dishwasher—I just needed to cook smarter. After all, so many people went without that luxury that I really had no reason to complain. That’s where I discovered the wonder that is a one pan recipe!
As someone who was a master of dirtying nearly every dish in her kitchen while making dinner the realization that I could make a tasty meal in just one pan was pretty much as exciting as discovering a new planet. And I immediately set out to find a recipe to try.
This one pan chicken and rice casserole is the first one I made for my family and it is a winner!

Quick tip: You can substitute boneless skinless chicken breasts for the thighs depending on your preference—however, if they’re large breasts you’ll need to increase the cooking time.
