Is This Chicken Drunk?
This dish was very popular at a national restaurant chain a few years back. But then someone with an overly-inflated sense of morally righteous indignation complained about the fact that it contained alcohol, and it was dropped from the menu. Then the restaurant patrons complained that they wanted it back. In a rather ineffective compromise, the restaurant reinstated the dish, but without the alcohol.
It just wasn’t the same delicious combination of lime and tequila that it had been before. I hate to think of all the money that restaurant lost because it kowtowed to one group of consumers and shortchanged the others. Personally, I loved this dish and always ordered it. Now I rarely visit that restaurant, protesting in my own insignificant way.
Here’s the good news: now you can make this dish at home. This recipe is for the basic chicken, so you would have to add the rice and colorful tortilla chips it was served with. But it was the chicken that was really the star of the show, so enjoy this recipe and serve it with any sides you would like.
The tequila adds a sweetness that is balanced by the citrus acidity of the lime. This results in a savory, indescribably delicious chicken that you have to taste to really appreciate.
