Sometimes, Simplicity Is Key!

Sometimes, simplicity is key. I had no idea that just five ingredients could make a chicken taste so good, but I think picking the freshest ingredients is the key to this recipe.

Just like a lot of other little girls, I learned how to cook from watching my mother in the kitchen. About twice a month, my mother would make her Rosemary Roasted Chicken. We had a pretty large family (I have five brothers and sisters), so her recipe always included and entire chicken, which I loved to watch her prepare.

Like I said, simplicity is key, so her Rosemary Roasted Chicken didn’t take much time to prepare. However, my mother always had a very calm demeanor about her, so she would be very gentle with the chicken.

She would use her paring knife to very slowly slice slits into the chicken skin, and then she’d be careful to make sure all of her seasoning was evenly distributed throughout the bird. Then, she would delicately place the whole chicken in the roasting pan. She would make sure the onions she placed around the bottom of the pan were completely even, just like her seasonings, before sliding the entire thing into the oven.

I think that’s why this Rosemary Roasted Chicken tastes so goo: because it is always made with love and very delicate care.
