Who Can Resist Tiny Food? These Little Meatloaves Are Too Cute To Resist
Now that I’m an “empty nester” I’ve been spending less time in the kitchen. My husband and I don’t have as big of appetites as we used to and tend to stick to a few of our favorite meals like a simple chili or casserole that I can make a big dish of to enjoy leftovers for the next few days. But when the grandkids come over I love taking the extra time to make fun and tasty recipes like these muffin tin meatloaves.
The first time I saw this recipe (can’t for the life of me remember where!) I made a note to make it the next time our family came over for dinner. Of course, by the time we actually got everyone over I had completely forgotten about this recipe and made something else.
Does anyone else do that? Find a great recipe just to forget about it for a few months?
Fortunately for me my oldest granddaughter requested meatloaf for her birthday dinner a few weeks ago and this recipe instantly popped back into my mind. I doubled it to make sure there was enough for everyone to enjoy and, boy, did they!
There wasn’t a single mini meat loaf left.

Quick tip: Use ground turkey or chicken in place of ground beef for a lighter option—but note the loaves may be a little drier.
