Enjoy the Delicious Taste of Summer with Cowboy Caviar
If you spend any time on Pinterest at all, you’ve probably seen Cowboy Caviar showing up in your feed. It’s the new “It” recipe, and I just had to try it out for myself. Basically you can think of it like a salsa, filled to the brim with fresh tomatoes, corn, onions, beans, and peppers. This recipe is easy to personalize to your own tastes, but for the sake of science, I made it as is for my first taste.
I have to say, I wasn’t sure what I was expecting – maybe something closer to a pico de gallo. But this recipe is totally unique in a great way! The dressing you pour over the ingredients is sweet and tangy, bringing a whole new dynamic to salsa that I never thought I would like. But by the time I emptied a whole bag of chips by myself eating this recipe, I realized that it’s pretty darn tasty! It would be the perfect addition to a summer barbecue or a game night with friends. Serve it up with tortilla chips and watch it disappear! Quick tip: If you prefer, you can substitute sweet or green onions for the red onions, which do sometimes have an overpowering flavor.
